The prized black truffle

Tuber melanosporum

Exterior appearance: relatively homogenous and rounded with polygonal warts.
Colour: blackish brown on the surface, it can have rusty coloured nuances when rubbed. The flesh (gleba) is light-coloured.
Scent: intense scent, aromatic and fruity.
Maturation period: December to March.
Associations with woodland essences: it grows in hilly and mountainous terrain. In the area’s truffle grounds it symbioses with ilex, oak, hornbeam, lime tree, plane, dog rose, olive tree, hazel.
Size: it varies in size from that of a nut to a large orange.
